Speed & Accuracy Contest: (1000 Points)
Speed Contest: (500 point)
The speed portion of the Speed/Accuracy contest will require the competitor to make six drinks and open a beer as accurately and quickly as possible. The six drinks for this contest will derive from the master drink list. The six drinks for each competitor will be randomly selected for the competitor. There will be multiple drink lists to draw from and the lists will be returned to the draw for the next competitor.
The competitors will be read and presented the drink list by the MC or Judge. The round starts when the MC or Judge says, "GO". The list will be placed in front of the competitor for them to refer back to if needed. When the competitor is finished with their speed contest they must raise their hands to signal the clock to be stopped. Once they signal the clock to be stopped, it cannot be started again and any adjustment to the drinks will award the competitor a 30 second penalty. Each drink list will consist of the following types of drinks:
(1) Frozen
(1) Multi Liquor Collins
(1) Multi Liquor Rocks
(2) Highballs/Mixed Drinks
(1) Chilled Shooter
(1) Beer
The beer must be opened, poured and served in a glass and placed on the bar top. Any spills will be treated the same as a liquor spill.
You may not use your own music for the speed round. High-energy music will be played by the MC/DJ for this round.
All bottles will be supplied for this round and may not be substituted. They will be 1-liter bottles.
Pour spouts will be Spill Stop #285-50 and may not be substituted. The speed round is more difficult to judge for accuracy as the only way to judge it is by the experienced judges eye. Thus the industry standard Spill Stop #285-50 must be used by all competitors in the speed round.
Two barbacks will be assigned to the bar to ensure efficiency as well as time management. Barbacks are only responsible for initial setup. Barbacks will only assist you when you need a replacement liquor bottle or tin or bar object. They will not do any coaching what so ever.
Juices and bottles must be replaced to the area they came from. They do not have to go back exactly in the same place or holder as they were pulled from, but they must be returned to the same area. Bottles from the well go back in the well, bottles removed from the back bar must be returned to the back bar and juices must be returned to the juice holders.
Time will be added for each mistake. Time will be adjusted, and then points will be distributed on a sliding scale. Each one-second is worth 2pts.
The sliding scale for the speed round will have a base of 70 seconds. An adjusted score of 70 seconds will be a full score of 500.

For example, if a competitor has a time of 87 seconds (unadjusted time) and has penalties that total 15 seconds, they will end up with an adjusted time of 102 seconds. The difference between the base time of 70 seconds and the bartenders adjusted time of 102 seconds would then be multiplied by 2 (2 points per second) giving the competitor the total deduction. (32 x 2 = 64) That is taken away from the perfect score giving the bartender their total speed score (500 - 64 = 436).
There will be NO bottle tossing to the barbacks.
Competitors will be given one bottle of each liquor required in the drink list. These bottles will be set between 1/2 and 3/4 full by the competitor. There will be back up bottles on the back bar.
There will be two stopwatches activated for each competitor to eliminate discrepancies.
All completed drinks and beers should be placed on the bar top. Any drink not on the bar top when time is called will be considered a missing drink.
Penalty Points:
2.5 seconds or 5 points:
- Spills of liquor, juice, or beer
- Over or under pours, including the blender
- Each liquor bottle not returned to the back bar or well
- Each juice not put into the holder on the bar
- Drink or Beer not being placed on bar top
- Missing or wrong garnish, straw, or ingredient
10 seconds or 20 points:
- Improper procedure
- Unsanitary procedure
15 seconds or 30 points:
- Any breakage
- Wrong drink
- Incomplete drink (Missing 2 or more of the components of the drink)
30 seconds or 60 points:
The competitor will only be penalized once for each mistake. If the wrong garnish is put in a drink, the competitor will not be penalized for both having the wrong garnish and missing the right one.
Improper Procedures:
- Either an ice scoop or a tin must be used at all times to scoop ice.
- All multiple liquor drinks served in a 14 ounce collins glass MUST BE SHAKEN. Judges will be checking to ensure that both parts of the shaker tin assembly are completely wet from the shake.
- All shooters must be chilled in a shaker tin, and must be shaken and strained with a strainer, tin, or glass.
- Garnishes must be put on top of finished drinks and squeezed if the drink recipe calls for a squeeze. (The garnish MUST GO ON LAST.)
- If an object is dropped on the floor that is used directly in the making of the drink, such as an ice scoop, strainer, glass, tin that is being used to strain with, straw, garnish, etc., they should not be picked up and used in the making of the drink.
Bartenders will receive a 10-point bonus for zero mistakes in the speed round.

Pour Contest: (500 point)
The pour portion of the Speed/Accuracy contest will require the competitor to pour the spirits portion of 10 pre-determined drinks as accurately and quickly as possible.

Competitors will be given 10 glasses. The glasses will either be a 10oz rocks glass or a 14oz collins glass. The glasses will be labeled with the name of each drink on them. Competitors will pour liquor only (actually room temperature water) into the empty glasses. There will be no ice, mix, garnish or straws. Competitors must pour the proper liquors in the proper glasses.
Bottles will be set between 1/2 and 3/4 full by the competitor.
All bottles needed will be put in the well. Competitors may arrange bottles in well.
Competitors will be able to arrange glasses any way they choose.
Competitors must use the correct bottles for each pour.
Competitors must pour drinks to specification. If the recipe calls for 1 1/4 oz of Skyy Citrus and 3/4 oz of Bols Triple Sec for a total of 2 oz. then that is the way it is to be poured, not the faster way of 1 oz of each liquor. This will result in an improper pouring procedure and will result in a penalty)
Time will start on the judge's mark. Bottles from well must be returned to well in any order. Time will end when the bartender calls time and puts his hands up in the air. When time is called any bottles not in their proper positions will result in a penalty.
If a competitor chooses, they may go back and add more to any of the glasses, as long as time has not been called. Competitors may also dump out a pour and re-pour it, as long as time has not been called, but this will result in a dumped drink spillage penalty.
If a competitor knocks over a glass before time has been called they may re-pour that pour with a spilled drink spillage penalty.
Competitors must use either bounce pours or they may cut the bottles and restart pours when going from glass to glass. Competitors may not slide pours. A slide pour will result in a spillage penalty.
Pours will be measured using an Exacto-Pour System. Pours will be measured at the bottom of the meniscus. If the bottom of the meniscus is touching the over/under line it will be a bad pour. We will be using a 1/8 oz variance either way.
Pourtest Scoring:
The base score will be an adjusted final time of 25 seconds. Adjusted time will be determined in the following manner. Judges will add any penalty to the competitor's actual time to get the adjusted time. The difference between the adjusted time and 25 seconds will be multiplied by 2 to determine the competitor's total deduction. The total deduction will then be subtracted from 500 points to get the competitors final score in this round. (Example: If you have an unadjusted time of 35 seconds and you have 10 seconds in penalties, then your adjusted time is 45 seconds. Your time difference will be 20 seconds. That will be multiplied by 2 to give you your total deduction of 40 points. That will be subtracted from 500, giving you a final score in the pour round of 460 points)
One second will be worth 2 points.
The sliding scale for the pour round will have a base of 25 seconds. An adjusted score of 25 seconds will be a full score of 500.

Pourtest Penalties
2-seconds - For every 1/8 oz each pour is off.
3-seconds - Spills on cuts or pours.
3-seconds - Each bottle not returned to the well.
4-seconds - Dumped, or spilled (completely) pour.
10-seconds - Improper pouring procedure.
15-seconds - Pouring a wrong liquor into a glass (unless bartender dumps and re-pours)
20-seconds - Each missing drink.
A pour test with zero deductions will award the bartender a bonus of 5 seconds or 10 points to be added to the final adjusted score.
